For an quick, easy, and healthy dinner:
Heat a little olive oil in a non-stick pan, sauté frozen onion and pepper blend (Trader Joes makes a great one) for a few minutes.
Add some frozen fish fillets (salmon, cod, steelhead trout all work well) and frozen, asparagus (cut into 1" pieces).
Season as desired with garlic, herbs, etc.
Cover and simmer until the fish flakes easily.
Serve with a whole grain like quinoa, whole wheat pasta, brown rice, lentils, etc.
Add marinara sauce for Italian flavor, salsa for Mexican, curry powder for Asian
